Homemade Granola...worth sharing!

While my Mom was here she brought me some homemade granola. OH MY HECK...love at first taste. Here's the recipe, and I made it tonight- super easy, and it makes tons! I like it on my yogurt with berries. ENJOY!!!

Maple Nut Granola - Makes 12 cups or more

Ingredients:
6 cups old-fashioned oats (18 oz. - not quick oats)
2 cups sliced, chunky chopped, slivered almonds, or a mixture of all (8 oz.) (Or can use pistachios or walnuts too)
1 cup hulled (green) pumpkin seeds (not roasted - 5 oz.)
1/2 cup hulled sunflower seeds (not roasted - 2.5 oz.)
1 teaspoon salt
1/2 cup olive oil

1/2 cup pure maple syrup
1 cup dried craisins
1 cup dried blueberries

Preheat oven to 350.

Stir everything together in a large bowl except fruit. Spread evenly in two shallow baking pans and bake in upper and lower thirds of oven, stirring and switching position of pans halfway through baking, until golden brown, about 20 minutes total.

Cool completely before adding dried fruit. Store in airtight containers or freeze.
